Utah spring weather is so unpredictable.
We get warm days and then get snow again. It's crazy.
So on one of our cold and wet spring days I decided to do a trial run on Aiden's birthday cupcakes. I used a chocolate cup cake recipe from Martha Stewart. I'm usually a pretty good baker, and her recipes are very reliable, but this time something went terribly wrong. Too much or too little baking soda? I don't know, but they fell in the middle. Big craters instead of rounded tops! They still tasted good though.
So my sister Kara and I salvaged the tragedy by making cake bites out of them.
Have you ever had a cake bite? They're divine!
Basically you just mix crumbled up cake with frosting, roll them into little balls and dip them in chocolate. Sounds good huh?!
Well they turned out really well. I'm actually glad my cup cakes failed. Now I just have to get the courage up to try making them again for his birthday.
While she was here, Kara gave Emma a mani/pedi.
Getting Emma to hold still while they dried was kind of tricky, but she loved getting her nails painted! It was fun having her come visit us.
