I've made lots of different banana bread recipes, but I think this may be one of the best ones I've ever made. I love the smell of banana and cinnamon wafting through my home. It's heavenly! And the bread tasted just as good, if not better, than it smelled. It was full of flavor and held up really well when slicing it and spreading butter on it. I just wish I'd had cream cheese to spread on it. THAT'S my favorite way to eat it! You'll definitely want to try this recipe, and don't forget the cream cheese.
Cinnamon Banana Bread
Ingredients
- 1/2 cup unsalted butter, softened (1 stick)
- 2 cup white sugar
- 3 egg
- 6 ripe bananas, mashed
- 4 cups all-purpose flour
- 2 teaspoon baking soda*
- 1 teaspoon salt
- 1 TBSP cinnamon
Directions
- Preheat oven to 350˚ degrees* F. Lightly grease 2 8x4 inch loaf pans.
- In a large bowl, cream together butter and sugar. Beat in the egg, vanilla and mashed bananas. Mix in flour, baking soda, cinnamon and salt just until combined. Pour into prepared loaf pan.
- Bake in preheated oven for 1 hour.
*If you're high altitude like me (above 3,000 ft), adjust the baking soda to 1 tsp. and up the oven temp. to 375˚. It will help your baked goods rise better.
