Meal Planning

I don't know why, but I've been in a serious rut when it comes to cooking lately.  I just don't feel like making dinner anymore.  Part of it may be due to the fact that I haven't meal planned in a while.  If I don't plan my meals for the week, I always dread dinner time.  So I decided to start this week off right.  I got the morning dishes done, and then sat down at the computer to meal plan!  I love cook books but I should never be allowed to buy them because they don't get much use.  I almost always turn to the internet.  I have a few favorite recipe sites I use on a regular basis because I know their recipes are reliable.  Right now those are:

Okay, so I was thinking of all of you and just in case you were looking for some dinner inspiration this week, I thought I'd share my menu plan for the week. Let me preface this by saying I didn't plan for sunday because I would like to normally do my menu planning and shopping on saturday.  So Sunday will be the first day of my menu plan, starting next week. Okay, so here's this week's plan:

Monday- Caribbean Rubbed Pork with Mango Salsa
Tuesday- Chipotle Pork Tacos
Wednesday- Chicken and Corn Chowder with Sweet Potatoes
Thursday- Quick and Easy Noodle Stir-fry
Friday- Basil Chicken with Coconut Curry Sauce
Saturday- leftovers or go out to eat (and shop for next week)


It all sounds delicious and I'm looking forward to a week of good meals; as is my family! :) Happy Monday!

  2. Oh you're killing me with the pork recipes. They sound so yummy and that's the one thing we can't have in the sandbox. :) I dread dinner time too, perhaps you will rub off on me and I can get into the meal planning thing too. I also love allrecipes.com you can find anything and everything on there.
